CREAMY MACARONI AND CORN SOUP - - If you need something comforting, try this. This is an easy and nutritious soup I make that goes well with hot rice or bread. A soup that is just perfect for a rainy day.
Ingredients:
1 1/2 c cooked macaroni
1/2 c shredded fresh corn (or corn kernel)
1/4 c carrots (cubed)
2 Tbsp leeks or onions
2 Tbsp butter or ghee
2 Tbsp milk powder (dissolved in water)
2-3 Tbsp cream of asparagus powder
(dissolved in water)
salt, pepper, seasoning
Procedure:
1. In a pot saute leeks or onion in butter or ghee.
Add carrots, corn, salt, pepper and seasoning. Cook for a while.
2. Add pasta broth or vegetable broth.
3. Add the macaroni. Pour in milk and cream of asparagus. Mix well and simmer till creamy. Serve hot.
