SINIGANG SA MISO



SINIGANG SA MISO - - After all the rich and savory food during the All Saints Day long holiday, I miss having a bowl of simple, hot and sour sinigang sa miso served with hot rice.
Miso means 'fermented beans ' in Japenese. It is a traditional ingredient in Japanese and Chinese diets. Miso paste is made from fermented soy beans and contains millions of beneficial bacteria.

Miso is rich in essential minerals and a good source of various B Vitamins, Vitamin E, K and folic acid.

Here is my recipe of vegetarian sinigang sa miso - - no need for maya-maya fish or bangus fish - - just the wonderful flavor of miso, asim ng sampaloc flavor and pungent mustasa leaves, raddish, gabi and tomatoes.

Ingredients:
1 c gabi
4 pcs red, ripe tomatoes
2 Tbsp leeks or spring onions (or garlic and onions)
1/2 c eggplant (sliced, fried)
1 c raddish
1 bunch mustasa leaves
3-4 Tbsp sinigang sa miso powder
Procedure:

1. In a pot, boil gabi, tomatoes, leeks or spring onions (or garlic and onions) and salt. Add raddish.

2. When raddish is tender, add mustasa leaves and sinigang sa miso powder. Simmer. Add fried eggplant. Remove from heat. Serve.
