EGGLESS CUSTARD PIE


EGGLESS CUSTARD PIE - - is so easy to make and yet the results are always good and yummy.  Compared to the classic custard pie made with egg yolks,  this one is healthier to enjoy eating without loosing any of the silky smooth goodness.

Crust:
1 c all purpose flour
1/2 c whole wheat flour
1/2 c butter
2 Tbsp sugar
5-6 Tbsp water

Procedure:
1.  Combine flour and sugar in a mixing bowl.  Add butter and water. Mix until crumbly.  Press on a pie pan. Set aside.

Meanwhile, prepare the custard filling.

Custard:
1 1/4 c milk
1 pack (3/4 - 1 cup) all purpose cream
3 Tbsp sugar
3 Tbsp custard powder
1/4 tsp vanilla

1.  If custard powder is not available, you can make your own:  combine 2 Tbsp corn flour or corn starch, 1 Tbsp milk powder, then add 1 Tbsp vanilla and a few drops yellow food color while cooking the custard.
2.  Combine all ingredients in a bowl.  Mix well until smooth.  Boil
over low heat until custard thickens.
3.  Pour over pie crust.  Bake until done. Serve.
(Note:  food color is optional)
